This is an example of small holders working together to produce amazing coffee.

This is a rare, sought after and award-winning coffee that has set numerous auction records over the years and has been at the forefront of Geisha production since the early 2000s. Del Palmar is a high quality Colombian coffee produced by a selection of small coffee growers who are part of the ‘Asociación de Productores Agrícolas de Palmar de Criollo’ founded in 2003 by 90 growing families.
Now made up of 150 members, the farmers deliver their lots to a Virmax facility located in Pitalito to be analyzed for physical defects and then cupped. Only those that score 84 points or higher are bought to become Del Palmar. This coffee is the product of exceptional craftsmanship by the small coffee growers and a great example of a balanced and sweet Colombian cup.

Since 1995 Juan Carlos Ventura and his family have been growing coffee in the South-West of Honduras. He employs up to forty families come harvest time in addition to two who maintain the farm year round. The coffee is mostly dried using raised beds, a method traditionally used in Africa, which is gaining popularity in Central America.

This coffee comes from the La Huerta farm in the North-west of Honduras.  La Huerta celebrated a win in this year’s national Cup of Excellence competition with a separate lot, and their quality growing and processing practices shine through with this coffee as well.

The family-run farm harvests pure mountain water to process their high-altitude coffee and uses raised beds to finish the drying process.

“After I achieved a university degree, my parents gave me a graduation gift, a charming piece of land which grew two blocks of apples and two of coffee. I put body and soul into the maintenance of the land and did my best to look for a job in my profession in order to invest in the farm. The aim was to cultivate the two blocks that were not planted with coffee.

Producing for the first time in 2010, I felt the satisfaction of how wonderful it is to harvest something one has grown, especially if it is something one enjoys, as with this special aromatic coffee.”

This coffee is produced by a true champion of specialty coffee, and a dear friend of ours, Erwin Mierisch. He is a head judge for the famed Cup of Excellence competition and has a reputation as one of the world’s top producers.

Earlier this year we roasted a micro lot of this coffee processed as a Black Honey. This batch is Fully Washed and the result is a cleaner cup, with more pronounced acidity.

The Montañas Del Diamante mill employs the Miel, or ‘Honey’ processing technique to produce a stunning coffee from cherries grown on the small farm of La Pastora.

In Honey processing, which is typical of Costa Rica, a layer of fruit is left on the coffee bean as it dries in the sun, allowing the it to absorb sugars and adding complexity to the final cup.

The term Red Honey refers to the amount of fruit remaining after initial sorting. As opposed to yellow honey, where a thin layer of fruit accompanies the drying bean, in Red Honey processing the entire cherry (minus the skin) stays intact.

A micro lot from the Mogiana region near Sao Paulo. The coffee is grown organically and dried on raised beds, as is common in this area of Brazil. This ensures even drying before further processing.  This is the third year we have bought coffee from this farm, which is part of the Fazenda Ambiental Fortazela network of growers in Southern Brazil.

Sítio refers to the size of the farm, which, by Brazilian standards, is a tiny eight hectares. Bigger farms are instead prefixed by the
term Fazenda.
