Sitio Santa Catarina is a 28-hectare slice of paradise situated in Pedralva, Minas Gerais. Producer Sebastiao Alexandre da Silva first planted coffee on the farm in 1983; the crops, unfortunately, were lost to heavy frost in the region. In response, Sebastiao Alexandre chose to plant new trees on higher ground to avoid such events in the future and began producing coffee once again.
Seven Seeds purchased four producer lots this year through our sourcing partner, CarmoCoffees. Sitio Santa Catarina is unique as it is situated outside the Carmo de Minas region. 41kms south-west lies a town called Pedralva, known for its mountainous, rocky terrain. When cupping samples from Pedralva and the surrounding areas, we noticed a distinctive mineral quality to the coffee from this region. These characteristics are most likely due to massive white stone deposits deep in the earth, which significantly impact soil composition and the natural characteristics of coffee from these parts.
In addition to the pleasant mineral quality, we found soft yellow fruit and an indulgent, creamy texture. Sitio Santa Catarina stands out from the pack, and we're excited to get this into the drum to share with the Seven Seeds family.
Sebastiao Alexandre's partnership with CarmoCoffees provides him access to the international specialty coffee market and technical assistance concerning farm management, pruning, soil analysis, and harvest techniques. The recent construction of the Pedra Branca wet mill by CarmoCoffees, now overseeing the pulping and drying of Sebastio Alexandre's coffee, has meant that consistency is now a defining factor in all produce coming from Sitio Santa Catarina. We've experienced these results first-hand on the cupping table and are confident we can continue this new friendship long into the future.
ROASTING SCHEDULE
We roast three days a week; Monday, Wednesday and Friday. The cut off time to be included in the day's roast is 7:30 AM (AEST) that morning. We dispatch the business day after the coffee is roasted. So if your coffee is roasted on Monday, our freight carriers will pick it up from us on Tuesday.
We are closed on public holidays and weekends; our roast and dispatch schedule will shift to the next business day.
