In Ethiopia, hundreds of heirloom varietals make up the bulk of the country’s coffee production.  These mostly originate from a Typica predesesor, but with wild mutations which result in some spectacular flavour profiles. All coffee farmers in Ethiopia are associated with a union which takes care of processing and exportation for hundres of farmers within a region.Yirgacheffe coffees like this one processed by the wet or washed method typically express great aromatic complexity and intensity with a particular emphasis on citrus and floral notes.
