Santa Lucia was purchased two years after her sister farm, Cerro Azul, in 2014. The farm itself was close to abandoned, yet had just enough infrastructure for coffee cultivation. It also had established shade trees and windbreakers. The vision of the farm was to grow unique or heirloom varietals only. A vision actualised, with Santa Lucia now cultivating, Laurina, Java, Orange/Yellow Bourbon, Yellow Pacas, SL-28, Ethiosar, and Gesha.
Seven Seeds has a special connection to Santa Lucia, with co-owner Mark helping to set up the farm, and allowing our roasters access to some incredibly rare lots over the last three years.
Much of Santa Lucia’s success should be credited to the original farm manager, Don Enrique, a coffee pioneer who sadly passed away last year. It is a privilege for Seven Seeds to purchase coffee he helped cultivate.
The Mierisch family see a huge amount of potential in the future of the Ethiosar. A workhorse varietal on their Nicaraguan farms, the family noticed a distinct change in flavour profile when they began to cultivate this tree in Honduras. Most recently this lot scored a 90+ in their private auction, Los Favoritos.
We roast three days a week; Monday, Wednesday and Friday. The cut off time to be included in the day's roast is 7:30 AM (AEST) that morning. We dispatch the business day after the coffee is roasted. So if your coffee is roasted on Monday, our freight carriers will pick it up from us on Tuesday.
We are closed on public holidays and weekends; our roast and dispatch schedule will shift to the next business day.

Ethiosar is a hybrid’s hybrid. Its complex genetic diversity results in a vibrant and unique flavour profile. This is the first time Seven Seeds has purchased the Ethiosar. We were able to secure two bags of this fantastic lot and couldn't be happier to feature it as our first micro release for 2022.
