Old faithful. We love when Guatemala season comes around. It means predictable quality from the producers we purchase from year in, year out.
This particular Finca Rosma lot from Fredy Morales and his family, is one that stood out from others on the cupping table this year. Where this is the case, we pay higher prices for higher quality. That said, all lot prices are negotiated and agreed upon to be above and beyond the cost to produce any given lot.
In terms of flavour, we wanted to make sure that not only does the rich fruit sweetness come through, but also the creamy body to go along with it.
Finca Rosma has been listed as a sustainable coffee farm, taking care of two basic criteria: Environmental and social responsibility They offer houses, schools and medical assistance to farm employees. To conserve the soils and the biodiversity of the plantation, the coffee trees are cultivated in the shade. This is beneficial continue native forest and promotes wildlife habitat.

ROASTING IS SUBJECTIVE, BUT TRANSPARENCY IS CLEAR
We determined a sustainable, profitable price for the growing longevity with the producer. As this coffee was purchased directly from Fredy Morales, who also completed the milling & export, we’ve listed the FOB (Freight on Board) inclusive of the Farmgate price. On top of FOB, we then pay to ship the coffee to Melbourne, quality assess, roast (resulting in a 15% weight loss), & retail it, adding significant costs & risk.
