This coffee initially stood out on the cupping because of its heavy stone fruit tones upfront and its subtle floral finish. As producer Miller Walles has continually looked to improve and innovate his processes and techniques. This lot itself has undergone a honey process with a long fermentation time. For those of you wondering, Honey process is a sort of middle ground between Washed and Natural processed coffees. As it is a hybrid process, often times the method carried out is usually based on farmers own interpretation specific to their varietal and climate. Miller has not de-pulped this lot but treated it to a long drying phase with most of the mucilage of the cherry intact. It is very unique process that has created such a fantastic lot.
