Silvio Leite is a name all coffee professionals recognise. He co-founded the Cup of Excellence in 1999, is a world-renowned COE head judge, passionate specialty coffee advocate, and, more recently, an award-winning coffee producer. The list of Silvio's achievements stretches back almost 30 years & his contribution to specialty coffee can not be understated.
From the Passagem de Pedra #11, you can expect tropical fruit nectar, tart honeysuckle vibes and a dynamic profile with great body like most Brazils but with an added layer of complexity not seen in too many pulped naturals.
Traditionally here at Seven Seeds was have not had many Brazils roasted for filter as the quality wasn't where we would like them in previous years. It's only been in the last couple of years we've seen the quality come through to a point where we could run them as a truly delicious filter brew.
Seven Seeds started purchasing coffee through Silvio Leite over seven years ago now, who also acts as our export agent for a handful of other farms we source from in the region. Silvio is a true pioneer of the industry and a dear friend to us all; we couldn't be more thrilled to have this ongoing partnership with him and his team. Thank you, Silvio!
ROASTING SCHEDULE
We roast three days a week; Monday, Wednesday and Friday. The cut off time to be included in the day's roast is 7:30 AM (AEST) that morning. We dispatch the business day after the coffee is roasted. So if your coffee is roasted on Monday, our freight carriers will pick it up from us on Tuesday.
We are closed on public holidays and weekends; our roast and dispatch schedule will shift to the next business day.

Gone are the days of 'dusty Brazils' where roasters settle for questionable, low altitude Arabica thrown into blends to keep margins favourable. This release is a shining example of Silvio Leite's hard work and dedication to pushing coffee from Brazil into a new realm.
