The release of this coffee marks a significant change of direction of our Decaf journey. For the first time in Seven Seeds history we have directly sourced a lot for the non-caffeinated drinkers. A number of Azahar's long term producing partners have contributed to this project, two of whom we have purchased from this year. Shout out Miller Walles and Luis Jojoa. I'm not sure what Rainbows taste like but this could be pretty close. This is a mightly blend of some pioneering farmers, which Azahar has been working with for a long time, they are dedicated to cultivating high-quality specialty coffee. From one of Huila’s most sought after origins and the current home of the Pink Bourbon boom, the municipality of Acevedo: Don Gabriel Castana aka the father of said Pink Bourbon boom, his son Jeferson Castaño Motta and Duverney Sanchez, from Pitalito: Luis Alberto Jojoa and Carlos Guamanga, from Paicol: Miller Walles, and last but not least, one the few producers from Cauca we work with, Jose Olmedo Sanchez, from Paez, Cauca. The decaffeination process is totally organic, utilising Descafecol, which is a solvent-based process. The decaffeination agent we use is called ethyl acetate (also known as ethyl alcohol) and is derived from a mix of acetic acid (vinegar) and a natural extract distilled from sugar cane, blackberries, beets or sometimes grapes. We use a direct-solvent process meaning that first the beans are steamed to open their pores and are then rinsed in ethyl acetate repeatedly to remove the caffeine. Next the beans are dried but not completely, 10-12% humidity remains, and then the open bean is sealed with natural wax that in no way affects the flavour, fragrance or aroma of the coffee.
