Lito Cubas Olivera is making his debut on the filter menu at Seven Seeds in 2025, but his experience in coffee production runs deep. Coming from a long lineage of coffee farmers based in northern Peru, Lito represents a tradition deeply rooted in one of the country's coffee-rich regions. This area is home to numerous small-scale coffee plantations, typically ranging from 2 to 4 hectares. Coffee is carefully picked, pulped, and dried on-site, with forward-thinking farmers like Lito embracing modern infrastructure such as raised drying beds to achieve optimal parchment quality. The results speak for themselves: clean, expertly executed flavours burst forth in the cup, showcasing some of Peru's finest offerings.

Over the past 5 to 10 years, specialty coffee production in northern Peru has flourished. The region's vast array of favourable micro-climates provides ideal conditions for large-scale, high-quality coffee cultivation. Forward-looking producers have increasingly capitalized on higher premiums offered by roasters and exporters seeking top-tier lots. As market prices rise in neighbouring countries, Peru has carved out its own niche in the specialty coffee industry, solidifying its reputation for producing exceptional coffee. The country's clean, washed profiles continue to impress consumers worldwide.

2018 marked a statement of intent for us, to ensure that people growing exceptional coffee are still doing so in decades to come. 

We started publishing the price we pay to producers exposing the traceability they deserve and discerning drinkers' demand as the new norm. We refer to the most direct payment as ‘Farmgate’.

We’re proud we can publish this for our single origins and house blends.

Seven Seeds has been involved with the Speciality Coffee Transaction Guide as data donors for the past five years. We have signed 'The Pledge', a commitment to transparency in coffee trading.

Roasting and Shipping

We roast our coffee from Monday to Friday, but not every type each day. We aim to ship orders within 1-2 business days.

Roasted coffee reaches it's peak 5-14 days after roasting and stays fresh for up to 30 days. We may send coffee roasted a few days earlier.

The Roastery and Head Office are closed on weekends and public holidays; we do not roast or ship these days.

We offer Standard and Express shipping via Australia Post. Orders over $85 include free Standard shipping.

We do not refund or send replacements for orders delayed during transit.

If Australia Post determines that the order has been lost in transit, we can offer you a refund or a replacement.
