This naturally processed Geisha from Minas Gerais, Brazil makes its second appearance at Seven Seeds and we couldn’t be more thrilled. This lot comes to us from Luiz Paulo, founder of Carmo Coffees and the visionary behind the renowned Santuário Sul project. This exceptional coffee benefits from his meticulous post-harvest drying techniques, which are designed to preserve the purity of flavour and showcase the inherent elegance of this highly sought-after varietal.

Santuário Sul was established by Luiz Paulo Dias Pereira in 2015, motivated to challenge global perceptions of Brazilian coffee through experimental processing and expanded cultivar selection. Alongside traditional Brazilian coffee varieties like Yellow Bourbon, the farm cultivates over 30 exotic coffee types. Progressive practices such as shade-grown cultivation and innovative drying methods contribute to a vibrant spectrum of flavour profiles.

Since its inception, Santuário Sul has earned a place in the Brazil Cup of Excellence four years in a row — a remarkable achievement. In 2021, Luiz’s naturally processed Yellow Bourbon secured 2nd place with an outstanding score of 90.14 points, underscoring his relentless commitment to quality and innovation. Luiz Paulo is a true pioneer in the industry, and we feel incredibly fortunate to showcase his work at Seven Seeds. It’s an honour to collaborate with him and the dedicated team at Carmo Coffees.

Transparency

2018 marked a statement of intent for us, to ensure that people growing exceptional coffee are still doing so in decades to come. 

We started publishing the price we pay to producers exposing the traceability they deserve and discerning drinkers' demand as the new norm. We refer to the most direct payment as ‘Farmgate’.

We’re proud we can publish this for our single origins and house blends.

Seven Seeds has been involved with the Speciality Coffee Transaction Guide as data donors for the past five years. We have signed 'The Pledge', a commitment to transparency in coffee trading.

Roasting and Shipping

We roast our coffee from Monday to Friday, but not every type each day. We aim to ship orders within 1-2 business days.

Roasted coffee reaches it's peak 5-14 days after roasting and stays fresh for up to 30 days. We may send coffee roasted a few days earlier.

The Roastery and Head Office are closed on weekends and public holidays; we do not roast or ship these days.

We do not refund or send replacements for orders delayed during transit.
