This past year at Seven Seeds has been about staying true to what matters most: sourcing and roasting coffees with integrity, supporting the people behind them, and sharing the results with our community. From our cafés to our wholesale partners and home brewers, we’ve remained focused on quality and consistency, always grounded in the relationships that make it all possible. Guided by our values of transparency, sustainability, and respect for the craft, every decision has been made with care and intention.
Our commitment to coffees we genuinely love continues to shape everything we do. Because for us, it’s about ensuring great coffee is not only enjoyed today, but remains sustainable for the future

What We Pay For Coffee
2025 has brought its share of complexity. The global coffee market continues to shift, with fluctuating prices and currencies creating challenges for producers and roasters alike.
Yet through it all, we’ve held firm to our principles - paying fairly, nurturing long-term partnerships, and choosing sustainability over shortcuts.

Willyan Zambrano
SPOTLIGHT ON THE DON OF PINK BOURBON
Back in 2022, we introduced producer Willyan Zambrano, from Huila, Colombia. We were drawn to his commitment to quality and the exceptional Pink Bourbon he and his wife Maria produce at their farm, La Montañita. From the outset, our intention was clear: to support Willyan by purchasing the majority of his harvest and paying a premium to help build a more sustainable future.
Now, in the fourth year of our relationship, we’ve continued to purchase most of Willyan’s Pink Bourbon harvest each season. In 2025, we took a further step by contributing an additional 15% payment - generated from sales of our fifth Pink Bourbon release - and sent directly to Willyan and Maria, on top of the price already paid. Facilitated through our long-term partners at Caravela, this initiative is part of a broader prosperity pricing model designed to strengthen producer-roaster relationships.
This partnership is a reflection of our values and a step toward a more sustainable, transparent supply chain—one built on trust, shared goals, and mutual respect.
Introducing Suburbia
In February 2025, we opened Suburbia Bakery—a new venue close to home in Fairfield, serving exceptional coffee while providing us with a space to take full control of our pastry and bread production. It’s where our team can develop recipes, refine techniques, and consistently deliver high-quality goods.
Suburbia is part bakery, part retail, part café - built to support creativity and precision across the board. It allows us to strengthen our supply chain, improve consistency, and offer a more complete experience to our community. By combining the craft of baking with the ritual of coffee, we’ve created a space that feels purposeful, efficient, and distinctly Seven Seeds.
