Bourbon Ají is an emerging varietal out of Huila, Colombia, and isn’t actually a Bourbon varietal at all. It shows a genetic similarity to Ethiopian landrace. The varietal takes its name from the similarity of the tree’s cherries to the Ají pepper—unique in their colour, shape, and subtle spicy aroma.

Finca El Diviso is where Don Arbaey has cultivated specialty coffee for the past three years, building on 23 years of family and neighbour collaboration. He grows two distinct varieties: Pink Bourbon and Bourbon Ají. Like Pink Bourbon, Bourbon Ají is an emerging varietal out of Huila, Colombia, and isn’t actually a Bourbon varietal at all. In fact, like Pink Bourbon, it shows a genetic similarity to Ethiopian landrace. The varietal takes its name from producers who noticed the similarity of the tree’s cherries to the Ají pepper—unique in their colour, shape, and subtle spicy aroma. This release marks the first time Seven Seeds has purchased this intriguing new varietal.


His processing method begins with the selective harvesting of only fully ripe coffee cherries. These cherries are bagged for an initial 12‑hour anaerobic fermentation. Following this, the coffee is dry‑pulped and placed back into bags for a second anaerobic fermentation lasting 36 hours. Finally, the coffee is washed and moved to drying beds for approximately 20 days. It’s a thorough process that has resulted in an incredibly clean, vibrant, thought‑provoking lot. Producers like Arbaey are a perfect example of the exciting things emerging from Huila, Colombia.

2018 marked a statement of intent for us, to ensure that people growing exceptional coffee are still doing so in decades to come. 

We started publishing the price we pay to producers exposing the traceability they deserve and discerning drinkers' demand as the new norm. We refer to the most direct payment as ‘Farmgate’.

We’re proud we can publish this for our single origins and house blends.

Seven Seeds has been involved with the Speciality Coffee Transaction Guide as data donors for the past five years. We have signed 'The Pledge', a commitment to transparency in coffee trading.

Roasting and Shipping

We roast our coffee from Monday to Friday, but not every type each day. We aim to ship orders within 1-2 business days.

Roasted coffee reaches it's peak 5-14 days after roasting and stays fresh for up to 30 days. We may send coffee roasted a few days earlier.

The Roastery and Head Office are closed on weekends and public holidays; we do not roast or ship these days.
