It wouldn't truly feel like Honduras season without a release from fan-favorite Maria Reyes, who brings a touch of class to our single-origin menu with her ultra-clean, delicate, and floral-forward coffee.
El Guayabal is a small farm situated at around 1780 masl. Although production is relatively low, the quality is consistently extraordinary. As we enter the fifth year of our relationship, we are proud to say that each year we have purchased the entire output from Maria and Mario's farm.
Maria's 2025 lot epitomizes sophistication and elegance. Dominated by floral notes, with a refined, layered finish, it tells a compelling story about where it is grown and the dedication of Maria and Mario to their farming and processing methods. It provides a fantastic contrast to our forthcoming filter releases, offering a glimpse into the wonderful array of flavour profiles emerging from this origin.
This past harvest, Mark and Ryan had the opportunity to visit El Guayabal and speak with Maria and Mario. Moments like these are rare in today's sourcing landscape, but when they do arise, they present an incredible opportunity to deepen our understanding of the origins of these coffees.
