This seasons's harvest from Roger Quispe is a stunning example of one of our favourite coffee varieties, Caturra, showcasing extremely high clarity and exquisite complexity. This coffee, with its crisp flavours of citrus, red berries, and clean sugary sweetness, truly embodies what Seven Seeds is all about. As we enter our fourth year purchasing from Roger, it's clear that his clean and precise Caturra harvest can win over almost every coffee lover we know.
Finca Cedro Quemado, located in the mountainous province of San Ignacio, Cajamarca, is where Roger Quispe works his magic. On his 14 acres of land, purchased about 20 years ago, Roger grows Caturra, Typica, and a small amount of Catimor. The coffee is washed and processed on the farm, which is standard in most parts of Peru. Finca Cedro Quemado sits at an elevation of 1824 meters above sea level, providing an excellent altitude for the slow ripening of cherry, resulting in complex flavours and refined acidity.
Harvest time is always busy, stretching from April to November—a lengthy period compared to most harvests that last around three months. This extended period is due to the slow ripening of cherries, contributing to the great complexity and depth of flavour, though it’s slow going for the pickers! The ultra-refined, squeaky-clean finish is a testament to Roger Quispe’s hard work and dedication to improvement.
