Lito Cubas Olivera is making his debut on the filter menu at Seven Seeds in 2025, but his experience in coffee production runs deep. Coffee is carefully picked, pulped, and dried on-site, with forward-thinking farmers like Lito embracing modern infrastructure such as raised drying beds to achieve optimal parchment quality. The results speak for themselves: clean, expertly executed flavours burst forth in the cup, showcasing some of Peru's finest offerings.
