New Release | Matambo, Colombia

Matambo has appeared on our menu many times since the early days of Seven Seeds, and remains a benchmark example of coffee from Huila, Colombia. It’s silky and balanced, with just the right lift of fruit and acidity—a welcome return to open our Autumn menu.

Matambo is sourced from a dedicated group of small‑scale producers in Gigante, Huila, a municipality on the western flank of Colombia’s Eastern Cordillera. The region’s steep mountains, distinct light conditions and reliable water sources create ideal microclimates for slow, even cherry ripening, particularly on the highest farms. Cool winds descending from the mountains also play a crucial role in the drying process. Agriculture underpins Gigante’s economy—around 70% of local activity—with coffee and cacao as its primary crops.

The Matambo project began in 2008 with five local producers who were selling their coffee to a purchasing station in La Plata. Recognising the potential of Gigante’s coffees, Caravela established a purchasing station in the town in 2009, allowing these producers to sell directly and strengthening the foundation for the project as it exists today.
