As we enter our fourth year purchasing from Roger Quispe, it’s clear that his clean and precise Caturra harvest has the ability to win over almost every coffee lover we know. This lot is a stunning example of one of our favourite varieties, showcasing exceptional clarity and exquisite complexity.
Finca Cedro Quemado is located in the mountainous province of San Ignacio, Cajamarca. Roger Quispe grows Caturra, Typica and a small amount of Catimor on the 14 acres of land he purchased around 20 years ago. Harvest is always a busy time of year, running from April through to November — a fairly lengthy stretch compared with most harvest periods of roughly three months. This extended season is due to the slow ripening of the cherries, which contributes to great complexity and depth of flavour, but makes for slow going if you happen to be a picker.
This lot has been processed using the washed method, and we’re finding loads of sugary sweetness and crisp citric acidity. The ultra‑refined, squeaky‑clean finish is a testament to Roger Quispe’s hard work and his ongoing drive to improve. It’s safe to say this kind of coffee is what Seven Seeds is all about.
